Extra Special Cinnamon Rolls

Ingredients
- 2 pkgs dry yeast
- 1 tbsp sugar
- 1/2 c warm water
- pinch ginger
Dissolve and let stand a bit.
Add:
- 2 c warm water
- 3 tbsp salt
- 3 c flour
- 1/2 c sugar
- 3 eggs, beaten
Add:
- 2 c raisins
- 1/2 c shortening
- 3 c flour more or less to make soft dough
Directions
Let rise until double in bulk, then roll out to about 22" across. Fold the ends of roll under to make the roll more uniform in size, you will probably need to stretch it out and shape it.
Before rolling up the dough, spread with butter & sprinkle on dark brown sugar, about 1/2 of a 1lb box, and 4 tsp cinnamon. Cut rolls & put in pan. Let rise until light. Just before putting in the oven top with below topping.
Topping:
- 1 c cream, whipped
- 1 tsp cinnamon
- 1/2 tsp vanilla flavoring
- 1/3 c brown sugar, or just enough to sweeten
- Chopped nuts if desired
Bake in 375-400 degree oven about 20 minutes or junt until done. When they come from oven, frost with powdered sugar icing.
